Mac~N~Cheese...


Ok, so I am a macaroni and cheese fanatic!  I order it a restaurants and could eat it daily.  When Lincoln could eat solid food I came to the conclusion that I could eat as much mac-n-cheese as I wanted because having a child was the perfect excuse to eat mac-n-cheese whenever I wanted, right... 
 
 
I pretty much like all kinds of mac-n-cheese with the exception of the Kirkland brand, YUCK (thank goodness they had it on sample one day and I was not stuck with a million boxes taking up space in my pantry)!  I love Kraft and make that probably twice a week.  I've tried to make my own macaroni a number of times and have used a number of different recipes, but it just never comes out tasting right.  I have a friend that makes incredible macaroni, but she is what I would call a "real" cook.  You know the kind that you get a recipe from and there are no exact measurements...  That's her (that is so not me)!  I need exact easy to follow directions...  So while her macaroni is hands down the best I've had, I was not able to recreate it to taste as good as hers, so here is the recipe I have found that is a great base to start with and it is quick and easy!  I got it from a friend's blog Oly Momma (http://olymomma.blogspot.com  I highly recommend you check it out, her blog is FANTASTIC!) 

All you need are the following ingredients:
  • 1/2 c noodles
  • 1 tbsp butter
  • 1 tbsp flour
  • 1/2 c milk
  • 1 c shredded cheese
Bring your noodles to boil as directed on the package. 

While the noodles are cooking prepare the cheese sauce.  Melt the butter and add the flour.  Mix together until you have a paste.  Next add the milk and stir until there are no lumps.  Gradually add the cheese. 

Drain your noodles, mix with the cheese sauce (I never tend to use all of the sauce), and enjoy!

I have been using this as my base.  There are so many variations you can do to make it more flavorful for example try different types of cheeses, add garlic, bacon, salt etc.  Made as is is a great kids lunch that does not have all of the preservatives that a box of mac-n-cheese has :-)  I can't say that I'm kicking Kraft to the curb, but I will use this recipe a lot!!!  And Lincoln LOVES it too!
